Hard to tell from web photos but there seems to be less dynamic range in the newer restoration. The shadows are deeper and darker. Compare the light falling on the woman's right shoulder and hair or lack of it. The clouds in the second image are completely buned out in the newer print.

Funny, they just re-re-reissued the trilogy on blu-ray, now boasting a new restoration of The Good, the Bad & the Ugly (I have no idea how much of an improvement it may be), guess we can look forward to next year's re-re-re-reissue with the ostensibly restored A Fistful of Dollars, which doesn't look that impressive given the loss of detail in some of those shots.

Looks like they have used something like a digital intermediate to manipulate the colours. The colours are unnatural and there is a heavy blue cast on everything. How could anyone call this a restoration?

There's considerable debate going on about these new restorations among Leone buffs. Apparently they decided to redo the color timing to what they claim was Leone's original intention, based on Italian Technicolor prints of the films - the 4K remaster "The Good, the Bad, and the Ugly" has more detail than the previous Blu-Ray, but is rather jaundiced:
